Bikini Recipe

Yields 10 people

To make the Clementine Cordial (produces 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g granulated sugar

For the Premix (yields 850ml, serving 10)

400ml premium vodka
100ml London dry gin
150ml peach schnapps
200ml clementine syrup (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch

Instructions

For the Syrup: Combine all the ingredients into a pot, heat until it reaches a gentle boil, agitating until the sugar dissolves. Then, take off the heat allowing it to cool down entirely. Decant into an sterilised bottle, cap it and refrigerate it in the fridge, it can be stored for about a month.

To make Premix: Mix every spirits and syrup in a sizeable container, let it rest for an hour, then filter it preferably using a fine cloth, to ensure it's fully clarified.

For serving: Pour 85ml from the cocktail base into your cocktail shaker packed with ice, and agitate lightly for one minute to cool it down. Strain to a frosted cocktail glass or equivalent, top with a few cranberries and finish with a light spray of mandarin oil over the drink.
